The important point in frying is the oil temperature.
The best temperature is 170 ~ 180?C, but you do not need to fry in a big deep frying pan like in a restaurant. So take care not to put a lot of ingredients in the pan at the same time, the temperature will drop and you will get very oily fries.
It is difficult to adjust the heating power for frying at home, so it may take time but you should fry a little at a time. When you have finished frying, remove all food fragments from the oil pan.
This will help the oil last longer.
